Ingredients

  • ½ cup (1 stick)unsalted butter, softened (crust)
  • 3 ozcream cheese, softened (crust)
  • 1 cupall-purpose flour (crust)
  • ½ cuppecans or walnuts, chopped (filling)
  • 1egg (filling)
  • ¾ cupbrown sugar (filling)
  • dashsalt (filling)
  • few dropsvanilla extract (filling)

Method

  1. Make the dough. Blend the softened butter and cream cheese until creamy, then add the flour and mix well.
  2. Shape the shells. Divide the dough into 24 balls and press each one into a mini muffin cup and up the sides with your thumb. Keep the bottoms and sides an even thickness so every tassie bakes at the same rate.
  3. Mix the filling. Combine the pecans or walnuts, egg, brown sugar, a dash of salt and a few drops of vanilla.
  4. Fill. Spoon the filling into the shells, just to the top of the crust. It puffs as it bakes and can bubble over if you overfill.
  5. Bake at 350°F for 15 minutes to set and brown the crust, then lower the oven to 250°F and bake 10 minutes more so the filling sets gently.
  6. Cool. Let the tassies cool in the pan about 10 minutes, then run a thin knife around each one and lift it out.

Adapted from Sylvia's original card, which calls for 1 bar of oleo, the old-fashioned name for margarine. I use unsalted butter for a richer crust, but a stick of margarine swaps 1:1. Pecans and walnuts are both right there on the card, so use whichever you love. Store airtight at room temperature up to 3 days, in the fridge up to a week, or freeze up to 3 months, which makes these an easy make-ahead Thanksgiving dessert.

questions & answers

Pecan tassies: your questions

What are pecan tassies?

Pecan tassies are bite-size pecan pies baked in a mini muffin tin. The name comes from the Scottish word "tassie," meaning a small cup. The tender cream cheese crust bakes up more like a buttery cookie than a pie crust, which is why so many families put them on their Thanksgiving and Christmas cookie trays.

Can I use oleo or margarine instead of butter?

Yes. Sylvia's original card calls for 1 bar of oleo, an old-fashioned name for margarine. One stick of margarine (½ cup) swaps 1:1 for the unsalted butter. Butter gives a richer, more tender crust.

Can I use walnuts instead of pecans?

Yes. The original recipe card calls for ½ cup pecans or walnuts, so either one works. Chop them small so they spoon into the tiny shells easily.

Why do you bake tassies at 350°F and then 250°F?

The first 15 minutes at 350°F sets and browns the cream cheese crust. Lowering the oven to 250°F for the last 10 minutes lets the brown sugar filling finish setting gently without overbaking the shells.

How many tassies does this recipe make?

24. Divide the dough into 24 balls and press each into a mini muffin cup. If you only have one 12-cup tin, bake them in two batches.

Can I make pecan tassies ahead of Thanksgiving?

Yes. Bake them up to 3 days ahead and store airtight at room temperature, keep them in the fridge for up to a week, or freeze them in a single layer, then bag them for up to 3 months. Thaw at room temperature.

How do I get pecan tassies out of the mini muffin tin?

Let them cool in the pan for about 10 minutes, then run a thin knife around each tassie and lift it out. The cream cheese crust releases easily once it has cooled slightly.

What other cookies go on a holiday cookie tray with these?

Pair them with classic chocolate chip cookies or pumpkin s'mores cookies. Both start from my 3:2:1 cookie ratio.
